Ingredients
Cake
- ¾ cup coconut flour, sifted
- 1 tsp baking soda
- 1½ tsp Ceylon cinnamon
- 1 tsp ground ginger
- ¼ tsp nutmeg
- ½ tsp Himalayan pink salt
- 5 large pasture-raised eggs
- 1 large very ripe banana, mashed
- ½ cup avocado oil or cold-pressed olive oil
- ⅓ cup maple syrup (reduced slightly due to banana)
- 1 tsp Madagascar vanilla extract
- Zest of 1 orange
- ½ cup crushed pineapple (fresh or packed in juice)
- 2 cups finely grated organic carrots
- ½ cup unsweetened shredded coconut
- ½ cup chopped pecans or walnuts (optional)
Frosting
- 12 oz cream cheese or dairy-free alternative
- 4 Tbsp cultured butter or vegan butter
- ⅓ cup raw honey or maple syrup
- 1½ tsp vanilla extract
- 1 Tbsp orange juice or elderflower cordial
- Pinch of sea salt
Optional Garnish
- Edible flowers (violet, chamomile, pansy)
- Toasted coconut or crushed pistachios
- Candied carrot ribbons
- Lavender-infused honey drizzle
Directions
1. Prep the Pans
Preheat oven to 350°F. Grease two 6-inch pans (or one deep 8-inch pan). Line bottoms with parchment and lightly brush sides with oil.
2. Mix Dry Ingredients
In a bowl, whisk together coconut flour, baking soda, spices, and salt.
3. Mix Wet Ingredients
In another bowl, beat eggs, mashed banana, oil, maple syrup, vanilla, and orange zest until smooth and glossy. Fold in pineapple and grated carrots.
4. Combine + Rest
Gently stir the wet mixture into the dry ingredients until combined. Let the batter rest for 2–3 minutes to allow coconut flour to absorb moisture. Fold in coconut and nuts.
5. Bake
Divide evenly between pans and smooth tops. Bake for 30–35 minutes or until golden and a tester comes out clean. Cool fully on wire racks.
6. Make the Frosting
Beat cream cheese and butter until smooth and fluffy. Add honey or maple syrup, vanilla, orange juice, and a pinch of salt. Whip until airy and light.
7. Assemble + Garnish
Frost layers generously. Chill briefly between steps if layers shift. Finish with a sweep of frosting, and decorate with flowers, ribbons, or a honey drizzle for the signature Home & Fashion look.
