Tuscan White Bean Soup: A Rustic Embrace in a Bowl

Inspired by the rolling hills of Tuscany and the serene landscapes of the Catskills, this hearty soup brings warmth and nourishment to your table.

Ingredients

(Serves 4–6)

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 2 cups chopped kale or spinach
  • Salt and freshly ground black pepper, to taste
  • Juice of 1/2 lemon
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5–7 minutes. Add the garlic, oregano, thyme, and red pepper flakes (if using), and sauté for an additional minute until fragrant.
  2. Simmer the Soup
Add the cannellini beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15–20 minutes, allowing the flavors to meld together.
  3. Add the Greens
Stir in the chopped kale or spinach and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
  4. Finish with Freshness
Remove the soup from heat and stir in the lemon juice to brighten the flavors.
  5. Serve
Ladle the soup into bowls, garnish with fresh parsley, and sprinkle with grated Parmesan cheese if desired. Serve hot with crusty bread.

H&F Notes

  • Creamy Texture: For a creamier consistency, use an immersion blender to puree a portion of the soup before adding the greens.
  • Protein Boost: Add cooked quinoa or shredded rotisserie chicken for extra protein.
  • Storage: This soup stores well in the refrigerator for up to 3 days and can be frozen for up to 3 months.
