Ingredients

  • 2 lbs fresh strawberries, hulled and sliced
  • 3 tablespoons sugar
  • 9 tablespoons fresh orange juice
  • 1 oz unflavored gelatin
  • 1/4 cup Cointreau (or your favorite orange liqueur)
  • Ladyfingers (enough to line a loaf pan)
  • 1/2 cup fresh whipped cream

Method

Step 1: Macerate the Strawberries
Toss the strawberries with sugar and 3 tablespoons of orange juice. Let sit 15–20 minutes to draw out their juices.

Step 2: Prepare the Gelatin Base
In a small saucepan, dissolve gelatin in the remaining orange juice over low heat. Stir in the Cointreau, then remove from heat.

Step 3: Assemble the Brick
Line a loaf pan with plastic wrap. Dip ladyfingers briefly in the strawberry juice mixture and line the bottom and sides. Add a layer of strawberries, drizzle gelatin mixture, and repeat until filled.

Step 4: Chill and Set
Pour any remaining gelatin over the top. Fold the wrap to seal, place a light weight on top, and refrigerate overnight.

Step 5: Unmold and Finish
Gently unmold onto a platter. Top with whipped cream and, if desired, more berries or edible flowers for charm.
