Orange Soufflé — A Cloud of Citrus Elegance

Ingredients

• 1 cup whole milk

• 1 vanilla bean, split and scraped

• 1/2 cup white flour

• 2/3 cup sugar

• 3 large eggs, separated

• 4 additional egg whites (for a total of 7 whites)

• Zest and juice of 1 orange

• 2 tablespoons Grand Marnier

• 1/8 cup butter (for the batter)


For the mold:

• 2 tablespoons butter (for greasing)

• 1 tablespoon sugar (for dusting)


Method


Step 1: Prep the Mold

Preheat your oven to 375°F (190°C). Generously butter the inside of your soufflé mold and coat it with sugar, tapping out the excess. Set aside.


Step 2: Infuse the Milk

In a saucepan, heat the milk with the scraped vanilla bean and pod until it just begins to simmer. Remove from heat and let steep for 10 minutes. Discard the pod.


Step 3: Create the Base

In a bowl, whisk flour and 1/3 cup of the sugar together. Slowly pour in the warm milk while whisking. Return the mixture to the saucepan and cook gently over medium heat, stirring constantly, until thickened. Remove from heat and whisk in the butter, egg yolks, orange zest, juice, and Grand Marnier.


Step 4: Whip the Egg Whites

In a clean bowl, beat all 7 egg whites until foamy. Gradually add the remaining 1/3 cup sugar and beat until stiff, glossy peaks form.


Step 5: Fold and Fill

Gently fold one-third of the whites into the warm orange base to lighten it, then fold in the rest carefully to keep the batter airy.


Step 6: Bake with Confidence

Pour the mixture into the prepared mold. Run your thumb around the edge to help the soufflé rise evenly. Bake in the center of the oven for 25–30 minutes, or until golden and dramatically puffed. Do not open the oven door while baking.


Step 7: Serve Immediately

Bring it to the table at once — this is a moment worth savoring. Serve as is, or with a dusting of powdered sugar and a spoonful of lightly whipped cream.
