Ingredients

• 1/2 oz unflavored gelatin

• 1/4 cup freshly squeezed lemon juice

• 1/2 cup sugar

• 1/2 cup whipping cream

• 2.5 oz egg whites (about 2 large egg whites)

• Fresh seasonal berries (strawberries, blueberries, raspberries — or all three)


Method

Step 1: Bloom the Gelatin

In a small saucepan, sprinkle gelatin over the lemon juice and let it bloom for 5 minutes. Warm gently until fully dissolved, then set aside to cool slightly.


Step 2: Whip the Egg Whites

In a clean bowl, beat the egg whites until soft peaks form. Gradually add half the sugar and continue beating until glossy and stiff.


Step 3: Sweeten the Cream

In another bowl, whip the cream with the remaining sugar until soft peaks form.


Step 4: Fold with Grace
