Ingredients (Serves 4–6)
- 2 tablespoons olive oil (or coconut oil for a richer depth)
- 1 large onion, chopped
- 4 cups carrots, peeled and chopped (about 6 large carrots)
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon curry powder (Madras for heat, sweet curry for mild)
- 1/2 teaspoon turmeric
- 4 cups vegetable broth (preferably homemade or low-sodium)
- 1 small sweet potato, peeled and diced (optional for extra creaminess)
- 1/2 cup coconut milk (or cream, if preferred)
- Sea salt & freshly cracked pepper, to taste
- Fresh herbs: chopped parsley, cilantro, or carrot tops for garnish
- Toasted pumpkin seeds or microgreens, for a nourishing crunch
Instructions
- Sauté the Base:
In a large pot, heat the olive oil over medium heat. Add onions and cook until translucent and fragrant—about 5 minutes. Stir in the garlic, ginger, curry powder, and turmeric. Let the spices bloom for 1–2 minutes until the aroma deepens. - Add the Vegetables:
Toss in the chopped carrots and sweet potatoes (if using). Stir well to coat them with the spice blend. - Simmer Slowly:
Pour in the vegetable broth, bring to a boil, then reduce heat. Simmer covered for 20–25 minutes, or until carrots are soft and tender. - Blend to Bliss:
