🛒 Ingredients (makes ~4 cups | ~12–14 servings):
- 2 cups sprouted buckwheat groats (lightly toasted or dehydrated)
- 1 cup raw pumpkin seeds (pepitas)
- 1 cup unsweetened coconut shreds
- 3 tbsp raw organic honey (local if possible — for that floral nuance)
- 1 tbsp pure maple syrup (optional, softens the honey’s edge)
- 1 tsp pure vanilla extract (or scraped vanilla bean for an elevated twist)
- 1 tbsp plant-based liquid vitamin D₃ (from lichen or algae)
- ⅛ tsp sea salt (we recommend fleur de sel or pink salt)
- Optional: ½ tsp cinnamon, turmeric, or ginger (warm & immune-lifting)
🥄 Instructions:
1. Activate or Toast Buckwheat (Optional)
If using raw groats: soak in water for 8 hours, rinse well, then dehydrate or oven-dry at 170°F for 2–3 hours until crisp.
Or use pre-sprouted buckwheat from health food stores.
2. Mix Dry Ingredients
In a large ceramic or glass bowl, stir together:
- buckwheat
- pumpkin seeds
- coconut shreds
- salt and spices
3. Warm the Honey Binder
In a small saucepan on low heat, gently warm:
- honey
- maple syrup (if using)
- vanilla extract
- liquid D₃
⚠️ Do not boil. Warm just enough to pour smoothly while preserving nutrients.
4. Coat the Clusters
Pour the warm binder over the dry mix. Stir slowly with a wooden spoon or silicone spatula until evenly coated and slightly glossy.
5. Scoop & Shape
Use a tablespoon to scoop portions onto a parchment-lined baking sheet. Press gently to form chunky clusters.
Want bark-style? Press into one single sheet and break apart later.
6. Bake to Golden Crunch
Bake at 300°F (150°C) for 12–15 minutes, turning the tray halfway through. Let cool fully before transferring to jars—it will crisp as it cools.
