🌿 Wholesome Coconut Flour Banana Bread
A lighter, nutrient-rich twist on the classic—naturally sweet, gluten-free, and deeply comforting.
Ingredients
- 3 very ripe bananas, mashed
- 4 large eggs
- 1/4 cup coconut oil, melted (or extra-virgin olive oil)
- 1/4 cup pure maple syrup or raw honey
- 1 tsp pure vanilla extract
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- Pinch of sea salt
- Optional: 1/2 cup chopped walnuts, pecans, or dark chocolate chips
Instructions
- Preheat: Warm oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper or lightly oil.
- Mix wet ingredients: In a large bowl, whisk mashed bananas, eggs, coconut oil, maple syrup, and vanilla until smooth.
- Add dry ingredients: Stir in coconut flour, baking soda, cinnamon, and salt. Let batter rest 2–3 minutes—coconut flour absorbs liquid.
- Fold: Add optional nuts or chocolate if desired.
- Bake: Pour batter into pan and bake 45–50 minutes, until a toothpick comes out clean and the top is golden.
- Cool & serve: Allow loaf to cool in the pan for 10 minutes, then transfer to a wire rack. Slice thick and enjoy warm or room temp.
